Steak Fajita Soup

Using up the leftovers from Tuesday night's dinner, I came up with a steak fajita soup recipe using the crockpot (so my kitchen wouldn't be hot and dinner would be ready when I got home from work). Love the crockpot. Here's what I did:

  • Leftovers - fajita seasoned steak strips mixed with onions and peppers (maybe 1/2 pound of steak and about 1 medium onion and 1 small green pepper chopped). You can get my recipe for fajita steak here.
  • 1 can of diced tomatoes with green chilies (with juice)
  • 1 can of black beans (rinsed well)
  • 1/2 cup frozen corn
  • 1 can of beef broth, about 8 ounces
  • 1/2 can of water

Place all ingredients in a crockpot and stir well. Turn the crockpot on low and cook for 6 hours. Add a little shredded cheese to the top when ready to serve. Taco chips make a great dipper for this soup! This makes about 4 heaping bowls of soup.
