
I've had this on the menu plan for over a week but just got around to making it. I love a good taco salad and the diced avocado really added a nice touch to this easy meal. This would also be good with the addition of black beans, corn or red peppers.
Spicy Taco Salad
1 pound lean ground beef
3 tablespoons of chili powder
1 tablespoon of cumin
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 avocado, diced
1 vine ripened tomato, diced
shredded romaine lettuce
1/2 cup shredded Sharp cheddar cheese
1 cup of mild chunky salsa, divided
Brown the beef until no longer pink in a large skillet. Add in the dried seasonings and cook 2-3 minutes. Add in 1/2 cup of salsa and continue to cook another 2-3 minutes. Line salad bowls with lettuce, avocado and tomato. Top with ground beef, shredded cheese and remaining salsa.
