Zesty Ranch Beef and Veggies


This dish is a result of trying to use what I have on hand before making another trip to the grocery store. I was not very sure of what I was doing as I added all of these things together but it turned out quite good!

Zesty Ranch Beef and Veggies

1 pound of lean ground beef
1 packet of powdered Hidden Valley Ranch Dip
1 bag of frozen mixed vegetables (broccoli, cauliflower and carrots)
1 cup of water or beef stock
4 ounces of shredded Parmesan cheese
Jasmine rice for serving

Brown ground beef in a large skillet over medium heat until no longer pink. Add in water or stock and ranch seasoning. Stir well and bring to a boil. Add in frozen vegetables. Reduce to medium heat and cover with a lid. Let this cook together for about 10 minutes. Serve over rice with a generous sprinkling of cheese.
